Uh oh, oh no: SMOOTHIE EXPLODES!

Okay, I made this post about a week ago, sorry for the absence. Life has been chaotic, crazy, stressful, and emotional. I am hanging in there.

Yes, you heard it right. My smoothie exploded. Well, technically I dropped it on the floor, but by looking at these pictures one would think that the blender went bazerk!

I made a lovely green protein smoothie/mousse concoction the other night out of 2 tbsp. BioChem Chocolate Whey, ~1/2 C. Unsweetened Chocolate Almond Breeze, handful of spinach, stevia, ice, and 1 tsp. xantham gum. It turned into a very light and airy bowl of green chocolate mousse. Much to my surprise I could not eat it all, so I took it to the freezer.



On the way there, in the dark, I ran into the wall. Yeah, what great cordination I have. Remind me that I am a dancer again? And the bowl toppled to the ground...and made it's way ALL over the floor, walls, and into my dad's study. Wow, great job Katie. Turns out I couldn't save it for later after all. Le sigh.



Now onto some food from yesterday:
(well, actually from a week ago..)

Breakfast:

greek yogurt, spiked with stevia and protein powder. topped with berries, coconut dust, and a slice of Whitney and Coutney's pumpkin bread that was smeared with sunbutter. lovely.
Dinner:

egg white scramble of spinach, bell peppers, sundried tomatoes, mozzarella cheese, and a tofu dog - all drizzled in ketchup. i paired it with a toasted TJ's ww english muffin: on one side, earth balance and apricot preserves; the other side, cashew butter and apricot preserves.

I would love to post my lunches, but because I pack my lunch for school, I never really remember to take pictures. Maybe, I will start doing that if I remember. Although, life is crazy right now, especially since this is my senior year and it will all be over in less than 4 weeks. However, I am EXTREMELY thankful for that. I will take the chaos as long as it gets me the diploma. :)
