Hey all. Wow, my weekend was crazy. Not crazy good, but not necessarily crazy bad either. Just crazy, hectic, and sort of stressful. I've been run down with a head/sinus cold since Wednesday finally feel better (with the exception of having to blow my nose every so often) after 7 days! One thing I did learn though, is that you get a nice abdominal tightening workout every time you blow your nose. :D Haha, I had to get my exercise in somehow with the zero amount of energy I had.
The remainder of my weekend was filled with snow, 3 hour dance practice, hitting a snow drift that resulted in doing a complete 180 and getting stuck near a ditch (luckily there are generous people in this world that would do anything to help), and having my car battery die when I was 30 minutes from home and stuck in the cold. I didn't go to school yesterday due to the fact that I didn't have a car until 4pm and I still didn't feel that well. Luckily, today school was canceled. Now I have time to get things done, sleep some more, and just relax!
I am really trying to get rid of a lot of the stress in my life. I am on overload practically. My goals are to:
prioritize
listen to my body
get more sleep
have a positive outlook
practice yoga a few times a week
exercise daily
eat food for me and no one else (no "all or nothing" approach!)
smile and be thankful and hold onto everything and everyone I have
continue to be myself and not change for anyone else

In an effort to eat according to what my body wants; I've been incorporating some cooked meals into my days when I crave them. I figured my body tells me what I want, so why not feed it what it wants? Surely if I am craving something that isn't raw, but is still nutritious, then it's okay. I am thinking that it means I am lacking in something and my body is telling me by craving it. Yesterday I listened to my body as best as I could even though I was feeling sick and my taste buds were dull and the stomach was kind of crummy feeling. For breakfast I had a lovely bowl of green oatmeal with spinach, dried figs, peanut butter, coconut, and peach butter. Lunch was a nice big salad (I knew I needed to get in some more greens!). My snack was a green smoothie to help fight this nasty cold and dinner was a recipe from Averie - her Vegan Gluten-Free Pancakes! I made some substitutions (chickpea flour and less oil), but they still turned out tasting good! They were sort of falling apart, but that may be due to the fact that I accidentally ground the flax seed into a meal, instead of keeping it in seed form to make that "eggy effect". Oops. Better luck next time?

Because I don't have school today, I am going to be trying to get a lot accomplished. I have some raw granola in the works, some reading to get done, essay writing, scholarships, maybe some yoga or treadmill walking (slowly easing back into exercise after being sick), and maybe a little nap. I'll be be posting a product review soon also! Depending on where you are on the map, keep warm in this wintery weather.

Sorry about all your car issues, I hope everything gets better for you. Sounds like you have good goals for the week ahead. :) Hang in there.
ReplyDeletePeach butter sounds interesting for sure, I have never heard of it before. I bet it is really yummy! :) I love your pancake creation they just look so amazing I think I just might whip me up a batch soon too! I didnt go to school today because of the snow, and im hoping its cancelled tomorrow because were supposed to get another foot! Geese louise!

Hey Katie, thanks for making and blogging about my vegan GF pancakes! I think one reason they could have been falling apart a smidge is that you said you cut back the oil. I am not one of those bloggers that dumps tons of oil just b/c it's got "good fats" in it...but there are times when, well, you need it for a recipe to stick together. No wheat gluten or real egg, and something has to do the job of glue. That's the oil in this case. Just my thoughts but also your flax seeds over grinding may have done it, too...but honestly, they dont look too shabby. At all. Great job!!!!!!

I'm glad you're okay. A lot of times car trouble (and actually anything going on around you!) can indicate a lot about what's going on with your outlook on life or your sub conscious. Maybe you were feeling stuck and needed to slow down?
ReplyDeleteI'm really glad you're okay and hope you're feeling better! I started eating all raw and started craving carbs like crazy, so I started eating some whole grain breads, tortillas, oatmeal, etc. and I feel so much better. I agree, if you listen, your body will tell you what it needs!
heya katie! i bake with agave whenever possible because honestly, i think the taste it lovely and it's much better health wise than granulated sugar (not to mention it isn't filtered with animal bones like normal sugar--gross!) i've found that it does change the way i bake because it is a liquid sugar and thus the dry/wet ratio is messed up. i believe there are converters online and trial and error works, too. also, agave usually browns baked goods more, so watch out for that. personally, i think it gives them quite a nice sun tan ;). if you have any more questions, i'd love to chat.
ReplyDeleteand your eats look so delicious! i don't know how you plate them so well; please, teach me your wisdom :). your salad looks especially wonderful. i've really been craving salads so i might have to make one now that you put the idea in my head.
i hope you feel better soon! just keep giving your body what it craves and i'm sure you'll be back to yourself in no time. i'm glad to hear you're starting yoga, as well. i really think this will help you feel better. i do yoga 6-7 days a week and it works wonders.

ReplyDeleteSorry, just getting around to reading through all my comments today, and I see you found a pancake recipe. Yes, I was going to tell you to try mixing 2 TBSP flax with 1/4 cup water as a sub for eggs. I always direct my vegan friends to Chocolate Covered Katie pancake recipes. Love them all!
